91 Ford E350 Electrical HELP

91 Ford E350 Electrical HELP

I am building a tiny house in this 91 Ford E350 bus. I have never done such a thing so please bear with me. In the midst of stripping the bus, I cut all the wires going to the back. Now I need to reconnect the tail lights.
Also, there were a ton of overhead lights (like 50) that I do not need, that have been torn out, but all the wiring in the front is still there. Now I am needing to get rid of the extra stuff and rewire with RV type electrical.
However, I have no knowledge of electrical diagrams or how anything works :/ I have a picture of what the electrical panel currently entails. Can anyone direct me in the right direction to do this? Maybe explain the panel?
I tried finding an auto electrician but somehow they are nonexistent/do not want to deal with this/probably cost a fortune, so I am left to my own devices... How do I figure out what all these wires are??
