Classic Chevy Oil Change Question

Chevy
Master Deluxe
350 Crate Engine
I hope this is a simple question for you guys. I love classic cars, but I am still a rookie. I have a 65 Impala and a 1940 chevy Sedan. I trust myself with the Impala as it is all stock and I have all of the specs. However, I am changing the oil for the first time on the 1940 Chevy Sedan. It has a crate engine, so I have no idea how much oil to add after removing the existing oil. Can anybody give me some tips on how to determine how much oil to add?
Sorry for the "rookie" question, but I do not want to harm my new old car.

The usual capacity is 5 quarts with a filter but you should have a dipstick to manually check the level. It can vary with different oil pans.
